I'm sure a lot of people were helped by this poll. It's very clear from
this poll that people who compete in contests, for the most part, don't just
open a bottle of barbecue sauce and use it straight out of the bottle.
Every once in a while on the BBQ Forum we have people asking about what
commercial sauce everyone is using. I think that sometimes this question
is asked by people who are hoping to find the great sauce that people are
winning contests with. A lot of the sauce manufactures sort of foster this
by indicating that their sauce has won this or that contest.
In actuality, the sauce that won the contests, that the label clearly shows
was more that likely "doctored" a bit. Something was added to the sauce or
some other sauce was blended with the original sauce to achieve the right
chemistry between the cooking procedure and rub to produce the winner.
That's the interesting thing about barbecue. If you know the basics anyone
can produce good barbecue. But to hit that winning combination that makes
the judges pay attention to your barbecue is hard. The people that compete
in contests spend a lot of time exterminating to find that winning combination.
Some never do find it.
